Red Beet (beetroot) Juice Concentrate & Extract & Powder

The beetroot is the taproot portion of a beet plant,[1] usually known in North America as beets while the vegetable is referred to as beetroot in British English, and also known as the table beetgarden beetred beetdinner beet or golden beet. Beetroot contains two types of molecules which are betanin and vulgaxanthin.

In this project; Vegetable juice was obtained by water extraction method. The resulting water was concentrated by evaporation after a series of treatments. In addition, betanin and vulgaxanthin molecules in the vegetable were purified by selective separation. After the separation, powder product obtained via spray drying method.
